The cookbook by Andrew Ho, Andrew Samia, and Sean Wen shares recipes from their modern Texas smokehouse, Curry Boys BBQ, including this queso that's loaded not only with curry paste but also Cajun seasoning, garlic, and onion.
“This thick, silky cheese becomes extra creamy and rich with a touch of Panang curry,” Wen writes. “It goes great with sausage or pulled pork, or you can just dip it in some tortilla chips as a simple starter. It's a genetic travesty that I'm lactose intolerant, but I'm willing to take a chance on this cheese.”
