Cathay Pacific Expands Duddell First and Business Class Collaboration – Business Traveler

Hong Kong's flag carrier Cathay Pacific takes its partnership with local Michelin-starred restaurant Duddell's to the next level with new 'Hong Kong Flavors' menu offerings for departing first and business class passengers. Hong Kong long distance services.

Following the launch of its collaboration with Duddell's in February 2023, oneworld member Cathay Pacific has once again worked with the restaurant to introduce the next iteration of menus showcasing authentic Cantonese and regional Chinese specialties alongside classic comfort dishes.

The latest menus are among a series of collaborations with acclaimed local restaurants and brands that Cathay hopes will deliver on its commitment to providing customers with carefully curated dining experiences.

First class

New premium appetizers include Crystal Pork Terrine with Black Vinegar (醋香水晶肴肉), inspired by a special dish from Zhenjiang in China's Jiangsu Province. This dish is made with cured pork knuckle, boiled, pressed and thinly sliced, then topped with a sweet and spicy sauce made with aged Chinese black vinegar.

Next, customers can choose from a variety of main dishes including stir-fried abalone and chicken with Szechuan pepper and crispy vegetables (碧綠川椒鮑魚雞球); and steamed cod fillets with Chinese ham and shiitake mushrooms (玉樹麒麟蒸鱈魚).

The meal concludes with a black sesame cake with tofu ice cream (黑芝麻撻配豆腐雪糕), which is inspired by the popular Chinese black sesame sweet soup.

Business class

In business class, customers can opt for Sichuan-style poached chicken with sesame-chili sauce (芝麻口水雞配醋香涼拌黑白木耳), a starter also known as “saliva chicken.”

Main dishes include braised pork ribs with hawthorn sauce and green apples (山楂果醋豬肋肉); and beef ribs braised with port wine (砵酒燉牛肋肉).

For dessert, Duddell's menu includes red bean tofu pudding (紅豆豆腐布甸) from Hokkaido.
