Camillo's Pizzeria

After trying out a number of European dishes in Delhi and recognising the need for simple yet expertly prepared dishes, Camillo's decided to expand its menu with dishes that were easy to understand and crafted with a unique culinary style. Our head chef, Chef Sudeep, whose vision is to serve comfort food that is presentable and simple, has been instrumental in developing this new menu. Highlighted by our in-house preparation methods (ranging from making ciabatta to tortillas and incorporating techniques such as smoking, compressing and fermenting), these new dishes include standout dishes such as pressed pineapple tartare, stracciatella bruschetta, soft shell crab aglio e olio and cacio e pepe pizza. We also offer gluten-free options such as tacos and burrata salad, with vegan options available upon request. For drink pairings, we recommend Thai iced tea with wood-fired sea bass.

Despite the introduction of these new dishes, all of our old favorites are still on the menu. Camillo's sets itself apart in the competitive restaurant industry by maintaining a complex mise en place and featuring simpler dishes, all of which are made in-house, unlike many places that rely on packaged ingredients. It's worth noting that our pizza dough goes through over 30 hours of fermentation. High-resolution images of the new dishes are available upon request.
