He sources high-quality urad dal, gram dal, rice and fenugreek, which are ground into a smooth batter using a home-made mixer.
Speaking to News18, Kanhaiya Sharma said, “I have been selling dosas for the past four years. I prepare dosas using good quality oil to ensure the health and well-being of my customers. First, I buy urad dal, gram dal, rice and fenugreek from the market. Then, I prepare the batter for dosas by grinding these ingredients in a mixer at home.”
“Next, I finely chop onions, tomatoes and coriander to mix with the dosa. I also prepare sambhar with a variety of vegetables to accompany the dosa. I make sure to use only high-quality spices, which gives the dosa a unique and delicious flavour. Recently, I started adding butter and cheese to the dosas and this variation has been a big hit with customers,” added Sharma.
