Three Los Angeles restaurants are in the 50 best restaurants in the world in the North America list


A new list of the 50 best franchises in the world of international meal guides announced its 50 best restaurants in North America on Thursday night. Three Los Angeles restaurants, Providence, Kato and Holbox were included in the 50 best opening restaurants in North America.

No. 1 restaurant on the list is atomix in New York City.

The guide classified restaurants from the United States, Canada and parts of the Caribbean. The restaurants in Cuba and the Dominican Republic will remain in the list of the 50 best restaurants in Latin America. All lists are determined by the Anonymous Voting Committee of 300 chefs, food journalists and “gourmets” of the company.

“The quality of food will be central, such as the service, but the style of both, the surroundings, the atmosphere, the social impact and the price level are each or less important for each individual,” said the best organization of 50 in a statement on the voting process and the considerations of the guide.

“There is so much talent in Los Angeles, and being chosen as the only one that represents our part of Los Angeles, our culture, our food, is super special,” Cetina said. “I think that feeling is very similar in all areas: everyone is really proud, especially at this time with these times when our people do not feel as welcome as we have done before, with the way politics is. Being able to be here in a national forum that represents Mexican culture through our food is really great.”

Other Mexican and Latin restaurants included are California in San Francisco, Alma Fonda Fina in Denver, César and Corima in New York City, Quetzal in Toronto and Alma in Montreal.

Cetina brought her wife, parents and staff to the event; They had received “clues” that Holbox would place, although the chef said he tried not to make their hopes. Holbox placed in the No. 42 on the North America list.

Kato's partner, Ryan Bailey, said he “ran” to Lax from the restaurant of excellent dining room of the arts district on Tuesday night to join his business partners, chef Jon Yao and Nikki Reginaldo in Las Vegas. Last year, the best list in the world appointed Kato as “One To Watch”, and also recommended its bars program as one of the “discoveries” of the guide. That recognition was the first guide prize for a restaurant LA in more than a decade.

Bailey said that in the months after last year's assent, Kato began serving more international clients than ever, and some visited from Hong Kong, Berlin, London, Tokyo and beyond. He hopes that the new North America Guide will also help expose the potential diners to Kato and the other winners. Bailey said he looks for these lists and local publications when determining where to dinner while traveling, and sees the new compendium as another tool for food tourism.

“I think for all angels, it's incredible,” Bailey said.

The year has proven fruitful for Providence, the fate of the Hollywood seafood tasting menu, which has just entered its twentieth year in the business. In summer he obtained his third Michelin star along with Somni, making history as the first three -star restaurants in Los Angeles. Providence also obtained a green star for sustainability. On Thursday night he held the 47th position in the 50 best in North America, and Chef's partner Michael Cimarusti won the star Damm Chefs Chofs Award from the organization.

“It's crazy,” Cimarusti said about success. “It is a little beyond my hopes or expectations. It is not something that you plan, it is not something that you allow you to wait or wait … we simply lower our heads and work. We are there to do our best for our guests, every day.”

Cimarusti, owner of the restaurant with partners Donato Poto and Crisi Echiverri, said that all praise belong to his entire team.

The chef and sustainability expert added that recognition only stimulates them to improve the restaurant.

“It's just an opportunity for us to continue pressing, because the plateau is the worst thing you can do in a restaurant, especially one like providence, a type of aspirational restaurant,” he said. “Together with please our guests, our greatest responsibility is to continue advancing and maintaining the restaurant evolving. That is what helped us reach the 20 -year -old brand, and that is what will help take the restaurant to the future.”
