Making dosa is not everyone's cup of tea and several local restaurants serving South Indian dishes fail miserably in their endeavour. However, one South Indian food outlet in Fatehgarh in Uttar Pradesh's Farrukhabad district stands out from the rest. Here, dosa is not just a meal – it is a culinary sensation that has people queuing up in front of it to savour its unique flavour.

Here, customers can enjoy a wide range of dosas, from paneer to masala, each crafted to perfection. According to shopkeeper M Pandey, dosas here are priced between Rs 60 and Rs 200. The shop generates a daily revenue of about Rs 3,000 to Rs 4,000, which works out to a monthly revenue of Rs 60,000 to Rs 70,000. This 25-year-old shop has stood the test of time, maintaining its renowned taste and quality over the decades.

Pandey shared that various types of spices are used in the dosa prepared at his shop, all homemade, which in turn enhances its flavour. Dosa lovers flock to this place from morning to night, and the paneer dosa is a favourite among many.

To prepare a delicious dosa, you need a large pan and premium oil. The method starts by heating the pan and adding a generous amount of oil. Then, the dosa batter is spread evenly on the pan. As it cooks, the dosa turns a golden brown color. Once it is cooked, paneer and fresh green vegetables are added on top. The dosa is then served on a plate, accompanied by sambhar, coconut chutney, and a variety of other traditional chutneys.
