Green Chilli Thokku is a delicious pickle made with green chillies, spices and tamarind. Renowned for its intense spiciness, this pickle complements a wide range of dishes and serves as a versatile accompaniment. It is commonly enjoyed as a dip with dosa, idli or rice, and many enthusiasts prefer to pair Green Chilli Thokku with curd rice. The traditional recipe calls for a spicy variety of chili peppers, although people are advised to select the chili variety based on their tolerance levels to prevent heartburn. Proper refrigeration in an airtight container is essential to prolong the shelf life of the pickle.

Making Green Chilli Thokku is a simple process that requires just 20 minutes of cooking and preparation. To start the preparation, gather the following ingredients:

Green chilies: 150 grams

Cheap Red Bull Chile: 10-15

Mustard: 1 tablespoon

Asafoetida powder: 1 tablespoon

Tamarind: 25 grams

Powdered sugar: 1 tablespoon

Curry leaves: a bunch

Butter: 2 tablespoons

Peanut oil: as needed

Rock salt: according to taste

Start the preparation by heating oil in a pan and adding chopped green chilies. Stir until they turn golden yellow, indicating that they are well fried. Then, add the seeded red chilies to the mixture and fry them until they also turn golden brown. Once both are fried to perfection, transfer them to a plate to cool.

After cooling, grind the fried chillies into a paste using a mixing jar. Next, in the same pan, heat oil, add mustard seeds and curry leaves and fry them. Add the asafoetida powder and mix well. Subsequently, add the ground chili paste along with the water and bring to a boil. Continue adding rock salt, jaggery powder and tamarind paste, stirring continuously until the mixture thickens. Once it no longer sticks to the pan, add two tablespoons of ghee and turn off the heat. Transfer the prepared Thokku to an airtight container for storage.
