Ingredients:
Oil – 1/4
Small onions – 20
Tomatoes- 3 to 4
Tamarind juice – 4 tablespoons
Water – As per requirement
Salt to taste
Sugar or jaggery – 1 tbsp
Chiles – 6 to 8
Tuvaram Dal or also known as Toor Dal – 2 tbsp
Uruttu dal or known as Urad dal – 2 tbsp
Fenugreek seeds (Methi) – 1 tablespoon
Cumin (Jeera) – 1 tablespoon
Asparagus powder – 1/2 teaspoon
Mustard seeds- ½ tbsp.

Turmeric powder
How to prepare this onion sauce? Follow these steps:
Step 1: Take a pan and let it heat up for a while.
Step 2: Once it is hot, add fenugreek seeds, mustard seeds, chillies and cumin and roast them till they turn golden brown and emanate a pleasant aroma.
Step 3: Set them aside and let the spices cool for a while.
Step 4: Next, place the spices in a blender and add the peeled small onions.
Step 5: Grind them well until they form a thick paste.
Step 6: Take the same pan, add 1 tbsp of oil and once hot, add some small onions and curry leaves.
Step 7: Sauté until the onion turns translucent.
Step 8: Add the chopped tomatoes, turmeric powder and salt to the onions. Cook until the tomatoes are tender.
Step 9: Next, once the tomatoes are soft, add the onion paste and mix well.
Step 10: Then add some tamarind water and stir well.
Step 11: Add a little sugar or panela to give it a sweet touch.
Step 12: Cover the sauce for 10-15 minutes and let it simmer until the oil separates.
Step 13: And your little onion sauce is ready.
Step 14: Serve hot
