Ingredients:

1 cup sabudana (tapioca pearls)

2 cups boiled and mashed potatoes

1/2 cup finely chopped cilantro leaves

2 green chilies, finely chopped

1 teaspoon cumin seeds

1 teaspoon red chili powder

Salt to taste

Ghee or cooking oil

Instructions:

  • Soak sabudanas in water for 2-3 hours until they become soft. Drain the water and set aside.
  • In a large bowl, combine the soaked sabudana, mashed potatoes, coriander leaves, green chillies, cumin seeds, red chilli powder and salt. Mix well to form a dough.
  • Divide the dough into small portions and form into balls.
  • Take a ball of dough and stretch it into a small disk using a rolling pin and a little dry flour.
  • Heat a tawa (grill) or a non-stick pan and place the rolled paratha on it.
  • Fry the paratha on medium flame until golden spots appear on both sides, applying ghee or oil as needed.
  • Repeat the process with the remaining dough balls to make more parathas.
  • Serve hot with yogurt, pickles or any chutney of your choice.
