Almond and custard apple rabri

Ingredients
Custard apple pulp 2 g
Double cream (fat) 1 g
No sugar To taste
Almonds 30 grams
Method
• Toast the almonds in the oven at 180 degrees Celsius for one minute.
• Grind the roasted almonds to a coarse powder and finely chop the rest.
• Combine the custard apple pulp, double cream and honey, then stir in the ground almonds.
• Refrigerate the mixture until cold and sprinkle with chopped almonds before serving.
Coconut and almond burfi
Servings: 4 – 5
Ingredients
Freshly grated coconut 1 cup
Ground and blanched almonds 1/2 cup
Without sugar 1 cup
Desi ghee 1/3 cup
Method
• Heat the ghee in a non-stick pan over medium-low heat and then add the coconut-almond mixture. Stir well to ensure a uniform mixture and continue stirring to prevent sticking or burning until the mixture begins to pull away from the sides of the pan and forms a cohesive dough. Add the sweetener and fold it in gently.
• Grease a baking sheet with ghee and keep it aside.
• Reduce the heat to low and continue stirring for a few more minutes until the residue clinging to the sides of the pan appears opaque and dry, indicating that the mixture is approaching the right consistency to solidify.
• Transfer the mixture to the greased plate or sheet. Use greased hands to knead the dough, then flatten it into a neat square with a greased rolling pin to about 1/4-inch thickness. Smooth the surface as necessary.
• Once the mixture has partially cooled, cut it into equal squares with a knife. Once completely cooled (about an hour), carefully separate the burfis with a flat spatula and store in an airtight container.
Grilled Almond Burfee

Ingredients:
Khoya (pindi) – 500 g
Sugar free – 40g
Toasted and crushed almonds – 1 cup
Method:
• Start by grating the khoya and keep it aside. Heat a frying pan and add the grated khoya, then add 40 grams of sugar-free sweetener. Simmer for 3-4 minutes, ensuring thorough mixing. Once ready, remove from the heat and add the toasted and crushed almonds. Quickly transfer mixture to individual serving plates.
• Sprinkle the rest of the sugar-free sweetener on top of each serving. Place the dishes in the oven preheated to 200°C, using only the heat from above, allowing the sugar to caramelize. Once caramelized, remove from the oven and serve immediately.
