Biscoff Cupcakes with Tutto Bene Biscoff Buttercream Frosting – Coffee

Ingredients:

muffin:

* 1 ½ cups all-purpose flour

* 1 teaspoon baking powder

*½ teaspoon baking soda

* ¼ teaspoon salt

* ½ cup unsalted butter, room temperature

* 1 cup granulated sugar

* 2 large eggs

* 2 teaspoons vanilla extract

*½ cup sour cream

* ½ cup Biscoff cream

* 4 Biscoff cookies, finely crushed

Biscoff Buttercream Frosting:

* 1 cup unsalted butter, softened

* 1 cup Biscoff cream

* 4 cups of powdered sugar, sifted

* 2-3 tablespoons of heavy cream or milk

* 1 teaspoon vanilla extract

Garnish:

* Crushed Biscoff cookies

* Whole Biscoff cookies for decoration.

Method

* Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.

*In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

*In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract and Biscoff cream.

* Gradually add the dry ingredients, alternating with the sour cream, starting and ending with the dry ingredients. Add the crushed Biscoff cookies.

*Fill the cupcake liners about two-thirds full with batter. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

*Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Dry ingredients

All-purpose flour – 290 g

Cocoa powder – 44 g

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Salt – 1/4 teaspoon

wet ingredients

Curd – 210 g

Milk – 90 g

Melted butter – 100 g

Castor sugar – 110

Vanilla extract – 1 teaspoon

Method

Step 1: In a bowl, place all the dry ingredients, eg. Flour, Coconut, Baking powder, Baking soda and Salt

Step 2: In another bowl, put the curd, sugar, melted butter, milk and vanilla extract.

Mix it well. Until there is a homogeneous mixture.

Step 3: Mix all the dry ingredients with the wet ingredients and mix gently with the help of a whisk.

Step 4: Use a cupcake pan and pour the ready batter halfway into each cavity.

Step 5: Bake in preheated oven for 15 to 18 minutes at 180°C.

Do the toothpick test and let the cupcakes cool before decorating them with your favorite Frosting 🙂
