How to prepare the famous Kolkata mango bhapa doi


Bhapa doi is made using only three ingredients.

Bhapa doi, a popular dessert from West Bengal, is prepared by steaming curd and condensed milk.

Mango is the king of fruits and Kolkata is the city of sweets. If you combine the names of both, you will definitely be talking about ‘Aam Bhapa Doi’ or ‘Mango Bhapa Doi’. If you have already heard about Bengali Mishti Doi, you must know that traditional Aam Bhapa Doi is becoming increasingly popular in Kolkata. It is served chilled after steaming.

Mango Bhapa Doi has a texture similar to that of a mousse and a baked cheesecake. This recipe does not require any special ingredients and is a quick and easy summer meal to prepare with your family. It is the glory of Bengali sweets, silky, smooth and bursting with mango flavour. Here is a simple recipe on how to make Mango Bhapa Doi with just three ingredients.

Necessary ingredients:

Curd – 750 grams

Mango pulp – 1 cup

Condensed milk – 3/4 cup

For garnish purposes:

Mango chunks – 1/2 cup

Chopped nuts – 2 tablespoons

Mango Bhapa Doi: How to prepare it

First, place a colander in a large bowl and cover it with muslin to drain the water from the curd. Then, wrap it in a cloth and press it down with a heavy object. Then, put it in the refrigerator for 4-5 hours. This way, you will prepare the perfect thick curd.

In a mixer, prepare a paste of mango pulp and mix it well with the curd. Also, add condensed milk and cardamom powder to make a perfect batter. Place this mixture on a greased baking tray and cover it with parchment paper.

Now, take an idli vessel with a bottom vessel filled with water and an upper vessel with small holes. Place a baking pan over this vessel and seal it tightly with aluminium foil. Now, let it steam for 20 minutes.

Once steamed, refrigerate for 3 hours. Then remove from the refrigerator and place on a serving platter, turning it upside down. Garnish with mango cubes and nuts and serve cold.

Mango Bhapa Doi: Things to Consider

– For this dish, use hung curd or Greek yogurt which is not too sour to make a delicious bhapa doi.

– Adjust the amount of condensed milk depending on the sweetness of the mangoes.

– Alfonso mangoes or ripe and juicy mangoes provide the best mango flavor.

– When steaming, make sure it is well sealed on all sides so that steam does not escape, otherwise your dish will not be cooked properly.

– Best served cold.
