Air Fryer Stuffed Chicken Wings
serves: 4
Ingredients:
1 kilo of chicken wings
75 g honey
1-3 tablespoons Calabrian chili paste from a jar, or chopped chilies from a jar, to taste
1½ teaspoons red wine vinegar
1 tablespoon tomato puree
1 tablespoon olive oil
1 teaspoon garlic powder
40 g of rice flour or cornstarch
1 teaspoon smoked sweet paprika
50 g of 'Nduja from a jar
150 g mascarpone or dolcelatte
Salt and freshly ground black pepper
Method:
1. Place the chicken wings in a colander, add a teaspoon of salt, and let the skin dry for 15 minutes while you prepare everything else.
2. To make the marinade, pour the honey into a large bowl and add the chilli paste or chopped chillies, vinegar, tomato puree and oil. Mix with a whisk and then set aside.
3. Preheat the air fryer to 190°C for three minutes.
4. In another large bowl, mix together the garlic powder, flour, paprika and half a teaspoon of pepper, add the chicken wings and toss so they are evenly coated. Pour about three-quarters of the honey marinade over the chicken and mix well. Transfer to the air fryer fitted with the basket and cook for 10 minutes. Flip the wings and cook for eight more minutes until sticky and cooked through.
5. Meanwhile, mix the 'Nduja with the rest of the marinade. Drizzle the sauce mixture over the wings and cook for a final minute or two to melt. Plate, sprinkle with mascarpone or Dolcelatte and serve with an ice-cold beer or glass of full-bodied red wine.
