Ingredients:
35 g ground coffee or 6 g instant coffee
1 teaspoon cinnamon powder
150ml milk or water
1 tablespoon sugar or honey (optional)
Instructions:
Brew ground coffee in a moka pot or mix instant coffee with warm water.
Heat milk or water, add cinnamon powder and sweetener.
Pour the warm mixture over the brewed coffee and enjoy your warm and healthy cinnamon coffee.
Tip: Substitute cardamom for the cinnamon as a variation.

Ingredients for mousse:
½ cup strong Java coffee
½ cup caramelized pumpkin puree
1½ cups heavy cream
4 egg yolks
⅓ cup of sugar
1 teaspoon vanilla extract
1 tablespoon gelatin (or 3 gelatin sheets)
Ingredients for the coffee and ginger coulis:
¼ cup espresso
¼ cup Thai ginger syrup
2 ounces dark chocolate (chopped)
1 tablespoon cornstarch
Instructions:
Mousse: Make creme anglaise by beating the egg yolks and sugar, adding the hot cream and adding the vanilla. Combine with coffee, pumpkin puree and dissolved gelatin. Add the whipped cream and refrigerate to set.
Coulis: Heat the espresso, ginger syrup and chocolate. Thicken with cornstarch and cool.
Drizzle the coulis over the prepared mousse and serve.

1 cup all-purpose flour
½ cup unsalted butter (melted)
¾ cup sugar
2 large eggs
¼ cup brewed Jamaican Blue Mountain coffee

¼ cup prune paste

¼ cup cocoa powder
½ teaspoon baking powder
¼ cup chopped almonds (optional)
Instructions:
Preheat the oven to 175°C. Grease and line an 8×8-inch baking pan.
Mix melted butter, chocolate, eggs, sugar, coffee, almond milk and plum paste.
Sift together flour, cocoa, baking powder and mix until combined.
Pour into the mold, sprinkle with almonds and bake for 25-30 minutes. Let cool and serve.
