Casey Elsass grew in New England and frequented a farm in the rural area of New Hampshire for hay walks and what he calls the best apple cake he has had. He shares a recipe for easy apple cake in his new cookbook, “What can I bring?”
“The dough is what you would expect, with apples cut into cubes, sour cream and cinnamon, in addition to a crunchy coverage of chopped nuts and brunette sugar,” writes elsass. “But the curved ball here is apple vinegar, which not only adds a ton of excellent apple flavor, but also gives the cake an elevated and spongy elevator.”
Note: The excess cake can be covered and left at room temperature up to 3 days or snack for up to 5 days.
