Delight your senses with these original mango recipes for National Mango Day

Whether you're a fan of traditional desserts or refreshing drinks, these original mango-inspired creations will add a tropical touch to your culinary adventures.

As summer comes into full swing, the king of fruits – mango – takes centre stage in our kitchens and hearts. National Mango Day is the perfect occasion to celebrate this delicious fruit with some unique and mouthwatering recipes. Whether you are a fan of traditional desserts or refreshing drinks, these unconventional mango-inspired creations by Arun Kumar, Sous Chef at Ashok Hotel, will add a tropical twist to your culinary adventures.

Mango Phirni

Ingredients:

  • 50 g Govind Bhog rice, washed and soaked
  • 1 liter of milk
  • 2 mangoes
  • 2-3 green cardamoms, coarsely crushed
  • 1 tablespoon cashew paste
  • 100 g of sugar

To decorate:

  • Mango, florets
  • Pistachio
  • A few mint leaves

Method:

  • In a grinding bowl, add the soaked basmati rice and a little water and grind it into a coarse paste. Set aside.
  • Now, in a large pot, bring the milk to a boil. Stir occasionally and simmer for 10 minutes.
  • Now, add the prepared coarse rice paste and stir continuously for 5 minutes.
  • Peel the mango and cut it into slices. Transfer it to a food processor and blend it into a paste.
  • Boil the milk until the rice is fully cooked.
  • We also add mango pulp and stir occasionally.
  • Add crushed green cardamom, cashew paste and mix well.
  • Add the sugar and mix well until the milk thickens and becomes creamy.
  • Pour into a container and refrigerate until cool.
  • Finally, serve the chilled mango phirni garnished with mango florets, pistachios etc.

Mango and ginger lemonade

Ingredients:

  • ½ cup mango pulp
  • ½ lemon
  • 1 pinch of ginger
  • Honey as needed
  • 1 cup of water

Method:

  • Put water and honey in a bowl and squeeze the lemon.
  • Add mango pulp
  • Crush ginger with a muddler, add mango to lemonade mixture, stir/shake, strain.
  • Serve cold.

    Mango and chia pudding

Ingredients:

  • 4 teaspoons of chia seeds
  • 1 mango, peeled and pureed
  • 1 cup reduced fat coconut milk
  • 1 teaspoon maple syrup
  • 1 teaspoon cardamom powder
  • ¼ teaspoon sea salt

Addition:

  • ½ cup diced mango
  • Coconut flakes
  • Pistachio

Method:

  • Add the chia seeds to a bowl and mix. Add the mango pulp, coconut milk, maple syrup, cardamom powder and sea salt.
  • Mix well to remove any lumps. Cover and refrigerate for at least 3 hours.
  • Served cold, topped with mango, coconut flakes and pistachio.
