A friend, Joe Zee, shared the simple ginger seasoning of his grandmother's ginger, which can be served next to the chicken. Combine 1/2 cup of grated ginger with 1/2 cup of chopped green onions, 1 1/2 teaspoons of salt and 1/4 teaspoon of white pepper in a heat -proof bowl. Hot 1/2 cup of neutral oil in a small pot on the stove until it is hot. Pour the hot oil on the aromatics, stir and serve. It is the perfect seasoning for chicken, a congee bowl or any other rice -based dish that can cook during the week.
