BBQ Mushrooms with Cheddar Cheese and Pepper
It serves: 2-4
Cost: £1.50 per head
Ingredients:
4 large Portobello mushrooms, stems removed
125g sliced cheddar cheese, preferably non-dairy
2 tomatoes, sliced
1 orange or yellow bell pepper, sliced
4 tablespoons olive oil
2 teaspoons BBQ sauce
Mixture of crushed pepper, sea salt and smoked paprika
Rocker and chopped cilantro to decorate
Method:
1. Mix half the olive oil and the pepper/sea salt/paprika and spread over the mushrooms. Place on barbecue over medium heat and grill for 10 minutes, basting occasionally.
2. Grill the sliced peppers and tomatoes, also basting them with the sauce mixture and turning them when they are charred.
3. Place the sliced cheddar cheese on top of the roasted Portobello mushrooms and continue cooking for 5 to 10 more minutes. Once the cheese has started to melt, add the sliced tomato and bell pepper, garnish with arugula and chopped cilantro and serve.
