From Mexican rice and beans to guacamole, here are some easy recipes for a meal box.

Deciding what to bring to work lunch is nothing short of a task. It's a daily challenge we all face, and relying on office cafeterias or nearby restaurants is not a healthy or economical option. So, to give a healthy touch to her tiffin time, chef Guntas Sethi recently shared some easy recipes on her official Instagram account to prepare a Mexican food box. From Mexican rice and beans to guacamole, the video shows the preparation of some tasty dishes that are perfect for lunchtime.

Mexican rice and beans:

Ingredients:

  • 2 tablespoons of oil
  • 1 cup boiled rajma
  • 2 cups tomato puree
  • Chopped garlic, onion and jalapeno pepper
  • 2 tablespoons Mexican seasoning
  • 1 cup soaked rice
  • 1 tablespoon cumin powder
  • 1 tablespoon chili flakes
  • Salt to taste

To make healthy and delicious Mexican rice and beans, pour 2 tablespoons of oil in a rice cooker and add chopped garlic, chopped onion, chopped jalapeno pepper, 1 cup boiled rajma, 2 cups tomato puree, 1 cup soaked rice and salt. Sprinkle with Mexican seasoning, cumin powder and chili flakes and mix. Add water as needed to cook the rice and cook it well. Once ready, decorate it with chopped coriander leaves and enjoy this tasty dish.

Charred corn sauce

Ingredients:

  • 1 cup boiled corn kernels
  • 1 tablespoon butter
  • 1 teaspoon Mexican seasoning
  • Salt to taste
  • 1/2 onion chopped
  • 1/2 cup finely chopped bell peppers
  • 1 chopped jalapeño
  • Chopped coriander leaves

Next, to cook charred corn salsa, put slices of butter in a pan and roast 1 cup of boiled corn kernels. Add 1 tablespoon Mexican seasoning and salt to taste. Mix it well, take it out on a plate and add 1/2 cup chopped onion, 1/2 cup finely chopped bell peppers, 1 chopped jalapeno and chopped cilantro leaves. Squeeze some lemon juice and mix everything.

Guacamole:

Ingredients:

  • 1 avocado
  • 1/2 lemon juice
  • chopped cilantro
  • Salt to taste

Moving on to the guacamole recipe, take an avocado and squeeze in 1/2 a lemon. Add chopped cilantro and salt to taste. Eat it with nachos for more flavor. In particular, avocados are delicious fruits packed with different vitamins and minerals.

Chia Mint Cooler

Ingredients:

  • 2 tablespoons soaked chia seeds
  • A few slices of lemon
  • Few mint leaves
  • Water as needed

Lastly, take a bottle full of water, add 2 tablespoons of soaked chia seeds and put some lemon slices in it. Add some mint leaves and your refreshing drink for a hot summer day is ready.
